After this initial stage, the cherries are depulped and transferred into sealed bags, where they remain for 204 hours (approximately one week). During this extended fermentation period, the coffee develops deeper complexity and structure in the cup.\u003c\/p\u003e\n\u003cp\u003eOnce fermentation is complete, the coffee is washed and moved to drying beds inside a greenhouse (marquesina), where it dries slowly and evenly for around 15 days, allowing the beans to stabilize and preserve their character.\u003c\/p\u003e\n\u003cp\u003eBeyond the process itself, this lot represents something bigger for Bayron. He first started with a washed lot, a process he knew well, sourcing cherries from neighboring producers to increase volume. The results were a success. Later, when Aaron from Portrait visited the farm, he saw an opportunity to become a key partner in helping Bayron grow this project.\u003c\/p\u003e\n\u003cp\u003eTo meet the initial volume requirements, Bayron once again worked closely with neighboring producers, purchasing cherries and processing a total of 1,000 kg as Black Honey. The process begins with a seven-day cherry fermentation, followed by depulping and careful drying.\u003c\/p\u003e\n\u003cp\u003eThe resulting cup is rich and comforting, with notes of chocolate, cacao, blackberry, and subtle spice. It has a creamy body, low-to-medium acidity, and a lingering cocoa-forward finish.
