The Process

How this coffee was produced

Black Honey, with an in-cherry fermentation prior to depulping that intensifies their natural sweetness and adds depth to the cup

Harvesting and Processing

The cherries are hand-selected and harvested 95% Ripe

Drying Phase

Sun-dried in open patios for up to three weeks.

Stabilization

They dried in sun-bed driers for 2 to 3 weeks and sometimes, depending on the weather, they finish the drying in mechanical dryers

What we taste:

Passion fruit, panela, mango, and chocolate. Vibrant tropical fruit character leads the cup, revealing layers of peach, pineapple, and ripe mango alongside a rich chocolate sweetness. A creamy mouthfeel carries into a long, fruit-filled finish accented by lingering cocoa notes.
