For Santiago, his father has been his most important mentor. In this process, Santiago wanted to dare to intervene in the process that his father had passed on to him and move from fermentation with water to dry fermentation to intensify its fruity notes. A coffee with more body, higher acidity, and a texture reminiscent of ripe mango make it one of our favorites.
