Alejo is beginning to introduce differentiated varieties on his farm, and this lot is one of his first explorations in that direction. Through an extended fermentation in cherry, he was able to develop a cup that is deeply floral and chocolate-forward, with layered notes of spice and eucalyptus that give it a distinctive and elegant character.

The Process

How this coffee was produced

A honey process, with an extended fermentation in cherry

Harvesting & Selection

Ripe cherries are carefully harvested and selected. They are then floated for density separation and hand-sorted to remove underripe, overripe, and dry cherries.

Processing and Fermentation

After a 200 hours of fermentation in closed tanks, it is depulped without water

Drying

Dry in sun-bed driers for 2 to 4 weeks
