This project was born from Driftaway’s clear intention to work with women producers. We faced one key challenge: most of these producers manage small farms, while Suyog - who's in charge of projects and green buying - needed a larger lot for the project to be viable. Instead of treating this as a limitation, we approached it practically — bringing several producers together to collectively meet the required volume while maintaining aligned quality standards. Chiroso Queen was created with this objective: to build a long-term relationship, secure a consistent place in Driftaway’s portfolio throughout the year, and create opportunities for producers such as Natalia Hernández, Carmen Montoya, Carmen Luisa, and Luz Dary to continue strengthening their quality and varietal management through this shared lot. The result highlights the defining qualities of Chiroso — a sweet cup with fresh green apple acidity, supported by a balanced, creamy body.

The Process

How this coffee was produced

Washed – most producers process Chiroso in a similar way, though fermentation times can vary depending on the farm’s temperature.

Harvesting and Stabilization

They harvests only the ripest coffee cherries by hand, then carefully sorts them through a flotation process using water to separate the high-quality fruit from any under- or overripe cherries.

Processing and Fermentation

They place the cherries in open baskets, for a 12 to 48-hour fermentation in their own pulp. This initial step initiates the breakdown of the mucilage surrounding the beans. Following this, they depulp the cherries to separate the beans from the fruit. The beans are then transferred to stainless steel tanks, where they undergo a second fermentation lasting 72 to 80 hours. After this process, they wash the beans.

Drying

They dry the coffee in open patios or marquesinas for 8 to 10 days.
