This Pink Bourbon presents a bright and lively profile, leaning more toward the yellow side of the flavor spectrum compared to Marlon’s Honey. The cup is filled with vibrant pineapple notes that come through beautifully in both sweetness and acidity, complemented by a gentle sugar-cane-like sweetness that rounds out the flavor. The processing is intentionally precise yet simple. After harvest, the cherries undergo a short fermentation of 24 hours in mucilage, carefully monitored in closed tanks to control the development of flavors. This brief, controlled fermentation allows the natural sugars to amplify the fruitiness without overpowering the delicate balance of the coffee. The result is a cup that is expressive, energetic, and exceptionally clean, with layers of tropical sweetness, bright acidity, and a smooth, lingering finish.

The Process

How this coffee was produced

Washed

Harvesting and Stabilization

The cherries are harvested and selected by density

Processing and Fermentation

The cherries are depulped immediately and fermented in closed tanks for 24 hours. After fermentation, they are carefully washed to remove any remaining mucilage.

Drying

It is dry for 7 to 8 days in sun bed driers until it reaches 11% moisture

Marlon Bolaños

Marlon grew up knowing coffee as his family’s livelihood, but it wasn’t until a barismo course at 17 that he began to see its deeper potential. What started as curiosity became commitment: planting differentiated varieties, refining fermentation through trial and error, and building Three Coffee Farmers alongside his two brothers. From the spring water filtered through rock on his farm — now known among competitors as “champions’ water” — to his dream of producing a winning auction lot, Marlon represents a new generation of producers shaping their future with intention, patience, and vision.
