The Process

How this coffee was produced

Red Honey with a 120 hours in fermentation

Harvesting and Stabilization

After harvest, green and mid-ripe cherries are carefully selected and separated, then floated in water.

Processing and Fermentation

The cherries are added in open tanks for 120 hours, after that they get depulped and left in baskets for 12 hours of oxidation

Drying

They dried in sun-bed driers for 3 to 4 weeks until it reaches 11% moisture
