Once processed, the coffee is transported to a cooler place for storage. The goal of Red Sun is to transform common crops into more distinctive profiles through extended fermentations. This particular lot is notable for its citrus notes, especially mandarin, which stands out as its most prominent feature. How this coffee was produced
Semi - Washed, with a short fermentation in tanks
Harvesting and Stabilization
Cherries are fermented in sealed tanks with water for 30 to 40 hrs
Processing and Fermentation
The cherries are then depulped and dry-fermented without water for 70 to 80 hours. After fermentation, they are gently washed using a minimal amount of water, intentionally leaving some mucilage on the parchment. Finally, the coffee is carefully drained to remove any excess water before drying.
Drying
The beans are dried in layers: thinner layers for 36 to 48 hours then thicker layers to reduce the drying speed but with a lot of movement (4 to 5 times a day) for 13 to 16 days.
