This is Santi’s signature coffee and the first differentiated lot produced on his farm. Santi inherited the farm from his father, and although coffee was always part of his life, he grew up in Medellín, far from daily farm work and hands-on production. A few years ago, Santi returned to the farm and took on the challenge of learning everything from the ground up: how to care for the land, manage farm labor, and process coffee with intention and consistency. Today, we’re proud to see the results of that work slowly taking shape. This natural lot is sweet and fruit-forward, with flavors reminiscent of ripe mango. It has a mild, balanced orange-like acidity and finishes with a lingering cocoa aftertaste that stays on the palate.

How this coffee was produced
This is a natural process with a short double fermentation
Harvesting and Stabilization
Harvest and sort cherries, with 95% being ripe and 5% semi-ripe.
Processing and Fermentation
His process takes two fermentation stages: one in cherry for 48 hours in open tanks and the second one after for 24 hours in closed tanks to highlight its sweetness and balance
Drying
It is dried in sun bed driers for 3 to 4 weeks

Santiago Arango Arango
Santiago grew up in a coffee-farming family but left for Medellín, where he built a career far from the coffee world. After his father passed away, he took over the family farms, and through learning the business, he discovered specialty coffee as a path to build a more meaningful, long-term legacy.
