This vibrant cup is the result of a traditional Colombian process: 48 hours of fermentation in cherry, followed by another 48 hours with mucilage. It also marks Santiago’s first step toward building his brand in the U.S. market.

The Process

How this coffee was produced

This is a washed process, fermented in cherry for 48 hours

Harvesting and Stabilization

Harvest and sort cherries, with 95% being ripe and 5% semi-ripe.

Processing and Fermentation

His process takes two fermentation stages: one in cherry after beign harvested and the second one afterbeign depulped before beign washed

Drying

It is dried in sun bed driers for 2 to 3 weeks

About the producer

Santiago Arango Arango

Santiago grew up in a coffee-farming family but left for Medellín, where he built a career far from the coffee world. After his father passed away, he took over the family farms, and through learning the business, he discovered specialty coffee as a path to build a more meaningful, long-term legacy.
