Alvaro’s process is one of the most common in Urrao, but the cup is anything but ordinary. We find a really unique sweetness, a bright and sweet acidity, and a creamy body. His farm sits in the perfect spot for colder and more controlled fermentations, and because his production is so small, every batch is handled with a lot of care, bringing out all the sweetness in the seed.

The Process

How this coffee was produced

Washed with an extended fermentation after beign depulped

Harvesting & Selection

The cherries are harvested, carefully pre-selected, and floated to remove any unripe beans or defects before being immediately depulped.

Processing and Fermentation

It is fermented in dry and open tanks for 4 days, and later washed

Drying

It is dried in sun-bed driers for about 20 days and kept in grain pro bags for 20 days before the dry milling

Álvaro comes from a family with deep roots in coffee farming and cattle ranching, and after many years in coffee, he is now beginning to carve his path in specialty coffee. Since we started working together in 2025, his discipline, competition experience, and commitment to quality have made us excited for what his future harvests will bring.
