Luis is a new producer in the program. His knowledge has been largely empirical, as he has been involved in coffee farming with his parents since he was very young. Motivated to improve the quality of his coffee, he delivered this lot as part of his process of learning and growth. This coffee shows notes of lemongrass, dulce de leche, and green apple. It was produced through 36 hours of whole-cherry fermentation in open tanks, followed by 72 hours of fermentation after depulping.

Washed with a double fermentation
Harvesting & Selection
After harvest, green and mid-ripe cherries are carefully selected and separated.
Processing and Fermentation
The cherries are left in closed tanks for an initial fermentation of 36 hours, later depulped without water and left in an open fermentation with water for 72 hours
Drying
The coffee is dried in sun-bed driers for 2 to 3 weeks until it reaches 11% moisture

Luis comes from a coffee-growing family in Vereda La Loma, Urrao, a region that endured years of violence but where his family chose to stay and continue working the land. After three years fully dedicated to coffee farming, he is steadily building his future with the dream of making a full living from coffee.
