Through a double fermentation—first in cherry and then after depulping—this process highlights the natural sweetness of the Chiroso variety, revealing a silky body and vibrant notes of passion fruit, panela, and ripe peach. This is the first of many coffees to come in collaboration with Víctor, marking the beginning of an exciting journey built around quality, curiosity, and innovation.

How this coffee was produced
Doble fermentacion, 48 horas en cereza y luego despulpado por 60-66 horas en canecas plasticas abiertas. Luego hacen otra seleccion.
Harvesting & Selection
The fresh picked cherries are floated and then kept in baskets for 48 hours.
Processing and Fermentation
After the first fermentation, the cherries are depulped and kept in open tanks for 60 to 66 hours of fermentation, later washed and selected again after depulped.
Drying
Dry in sun-bed driers for 2 to 4 weeks
