We liked this coffee for its natural florality and balanced sweetness. It undergoes nearly three days of anaerobic fermentation, a process that helps these qualities develop fully in the cup. The coffee shows distinct fruity notes, including lychee and orange blossom, which combine with a smooth white chocolate sweetness and a mild, refreshing citrus acidity. This lot is one of the varietals Yessenia has developed since taking ownership of her farm. Her careful cultivation and attention to processing allow these flavors to stand out, making this coffee a true reflection of her work and the unique characteristics of her farm.

How this coffee was produced
Washed with a short anaerobic fermentation
Harvesting and Stabilization
Only ripe cherries are harvested and floated for a second selection and left in open tanks for 24 hours
Processing and Fermentation
After the cherry selection, they are depulped and left in closed bags for 50 hours of fermentation
Drying
Dried in sun-bed driers from 8 to 11 days

Yessenia Romero
Yessenia grew up with her grandmother and developed an early interest in coffee. She met her husband, Jeison, and in 2023 they purchased their own farm. Since then, she has focused on planting new varietals like Pink Bourbon and Sidra, improving coffee quality, and expanding their farm. Yessenia is also a mother and manages small-scale crops and free-range eggs to complement the farm’s production.
Mira Mar
Mira Mar is farm located in Aipe, Huila. Yessenia and her husband bought it back in 2023 and its been their family project since then, they grow mostly coffee and to balance the farm’s production, they also have barns where they sell free-range eggs, chickens, and some small-scale crops
