Albeiro and Luz Dary have been processing this coffee the same way for many years, following the recipe they learned from their neighbor and mentor, Doña Carmen.
The cherries are carefully harvested and selected, then fermented in cherry for 15 hours. After depulping, the coffee goes through an additional 48 hours of fermentation before being washed and sun-dried.
In the cup, we find notes of brown sugar, green apple, orange, and florals. As it cools, peach and brown sugar become more pronounced, with a creamy body and medium citrus acidity. The cup develops nicely as it cools, becoming sweeter and more expressive.

They met later in life, and when they got married, Albeiro had always had the dream of building a house in the countryside and having a life there together with Luz Dary.
