This is one of Andrés' signature processes and one of the recipes that best represents his approach to fermentation. To encourage a faster fermentation and intensify the coffee's red fruit characteristics, he incorporates cane honey during the cherry fermentation. The result is a balanced and expressive cup with notes of blueberry, grape, cocoa nibs, and a round, lingering sweetness.

This coffee combines rich chocolate and cocoa with notes of ripe grape and red wine. Served hot, it reveals a balanced medium acidity and a creamy body, with elegant red wine and chocolate notes. As it cools, the chocolate becomes more pronounced, while the grape notes linger through a smooth, lasting finish.
About the producer
Andres Cardona began working with coffee at the age of 12, but it wasn't until 2018 that he took a specialty coffee course with the Antioquia government, which led him to experiment on his farm. Always eager to move his family forward, he has managed to steadily progress and maintain his processes in an incredible way. Today, his farm is more than just a farm—it's a processing center for other producers in the community, from whom Andres buys the coffee...
