Byron’s motivation to promote and gain recognition for his farm led him to develop this process. The double fermentation enhances the attributes of this coffee, which is why he named it “Baluarte,” meaning stronghold, as it strengthens the notes of pineapple, honey, and strawberries. Byron aims to convey strength through his coffee and invites us to learn more about
it.

This coffee is balanced and sweet, with a profile of brown sugar and cacao. A juicy citrus acidity brings notes of orange peel and pineapple, while strawberry adds a subtle fruitiness. The cup is complex and layered, combining chocolate-like sweetness with bright, tropical and red fruit notes.
About the producer
Byron is a youth leader who has assisted the young individuals in the municipality of Sonson in carrying out a generational shift on their farms. Byron encourages education and a love for coffee, motivating the youth to adopt new practices within their farms. He guides them towards enhancing their processes, resulting in higher quality and distinct coffee. Like the youth in his community, Byron aims for a true transformation in Colombian fields.
