Cabresto was born from the vision of three passionate individuals: Julián Patiño, David Mesa, and José Vásquez. In 2023, they set out with a shared goal—to transform coffee culture in their region, work closely with producers, and create spaces where farmers could enjoy and take pride in drinking their own coffee.
Their project gained momentum after receiving support from Fondo Emprender, a government program designed to empower entrepreneurs. Each founder brought a unique strength to the team: Julián had experience in the coffee industry through his coffee buying station, José contributed his knowledge as a coffee producer and farm owner, and David brought a deep passion for hospitality and serving coffee at the highest level. Together, they formed the perfect combination.
What began with a single roaster has grown into two coffee shops in Andes. In a region historically known for producing large volumes of coffee rather than specialty coffee, Cabresto has helped change the local perception of quality. Today, their cafés have become gathering places where people come together every day to enjoy coffee, learn about its origins, and experience the value of what is produced in their own backyard.
