Doña Carmen is deeply involved in every step of processing on her farm. Every day, she oversees each stage herself, making sure every lot is handled with care and traceability. Her attention to detail is reflected in the cup: a clean and elegant profile with notes of mandarin, caramel, and delicate florals, supported by a silky body and bright, balanced acidity.
For this washed process,the cherries ferment in open tanks for 12 hours before being depulped. The coffee then undergoes a second fermentation for 72 hours in stainless steel tanks, allowing the remaining mucilage to break down slowly and develop greater sweetness and complexity. After fermentation, the coffee is thoroughly washed and dried until it reaches the ideal moisture content, resulting in a clean, sweet, and beautifully balanced cup.

About the producer
Carmen Montoya has been a coffee farmer for 23 years. Since childhood, her parents instilled in her a love for coffee and the art of being a coffee farmer. She started with a small plot of an unknown variety in the region, putting all her effort into the processing of this coffee.
