The Process

How this coffee was produced

Natural with a 3 day fermentation in closed tanks

01. Harvesting

This coffee undergoes a much stricter harvest. Once it arrives at the wet mill, it is carefully inspected to remove any unripe cherries—ideally very few due to the rigorous picking process.

02. Processing

The selected cherries are placed in sealed plastic tanks and fermented for three days. Before moving to the drying stage, the coffee is drained in baskets, almost like straining, to remove excess moisture and prepare it for an even drying process.

03. Drying Phase

The coffee is dried in sun-bed driers for 3 to 4 weeks until it reaches 11% moisture

What we taste:

This coffee opens with vibrant notes of raspberry and strawberry, balanced by rich chocolate and caramel sweetness, with delicate hibiscus florals adding brightness and complexity. It has a bright, citrusy acidity that brings freshness to the cup, complemented by a creamy, smooth body. The finish is long and lingering, leaving a pleasant combination of fruit, chocolate, and floral sweetness.
