This Pink Bourbon presents a bright and lively profile, leaning more toward the yellow side of the flavor spectrum compared to Marlon’s Honey. The cup is filled with vibrant pineapple notes that come through beautifully in both sweetness and acidity, complemented by a gentle sugar-cane-like sweetness that rounds out the flavor.
The processing is intentionally precise yet simple. After harvest, the cherries undergo a short fermentation of 24 hours in mucilage, carefully monitored in closed tanks to control the development of flavors. This brief, controlled fermentation allows the natural sugars to amplify the fruitiness without overpowering the delicate balance of the coffee.
The result is a cup that is expressive, energetic, and exceptionally clean, with layers of tropical sweetness, bright acidity, and a smooth, lingering finish.

About the producer
For Marlon, coffee has always been the economic foundation of his family. At 17, he wasn’t sure what path to follow, so he enrolled in a barismo course at SENA. There, he gained knowledge in brewing, green coffee evaluation, and sensory analysis, and began to realize that his family’s farm could have a different future.
