Santiago’s washed coffee is a perfect representation of a classic Antioquian profile—bright acidity and sugarcane sweetness. This vibrant cup is the result of a traditional Colombian process: 48 hours of fermentation in cherry, followed by another 48 hours with mucilage. It also marks Santiago’s first step toward building his brand in the U.S. market.

Santiago comes from a coffee-farming family, but like many young people who grew up in the countryside, he moved to Medellín to build a career in the city, far removed from the world of coffee.
