This lot is processed by the producers with whom Weimar and Juliana from TerraCoffee have been collaborating. Their focus has been to encourage improvement and the introduction of specialty coffee in the region. They have worked particularly with producers who do not have highly differentiated varieties, such as Colombia and Castillo, and who are more susceptible to prolonged fermentation processes.
