The Process

How this coffee was produced

Natural processed coffee with a thermal shock introduced during fermentation, using the coffee’s own mosto to enhance the fermentation process.

01. Harvesting

Only ripe cherries are harvested and floated for a second selection and left in open tanks for 24 hours

02. Processing

a thermal shock process is done adding hot water for 30 minutes and later continuing with 80 hours of fermentation adding the coffee juice from the past fermentation

03. Drying Phase

They dried in sun-bed driers for 2 to 3 weeks and sometimes, depending on the weather, they finish the drying in mechanical dryers

What we taste:

This coffee opens with a vibrant tropical character, bringing notes of pineapple, mango, and mandarin alongside layers of cocoa and chocolate. As it cools, the acidity softens and the chocolate becomes more pronounced, while the fruitiness lingers through a creamy, smooth finish.

Yessica and Diego are fourth-generation coffee growers. Their family’s journey began with their great-grandfather, who decided to plant coffee as a means of survival after realizing its profitability. Later, their grandfather carried on the legacy while his wife focused on coffee trading. Together, they became the first local buyers for the National Federation of Coffee Growers: he would purchase pulped coffee from neighboring farmers and sell it to the Federation.
