Nicolle’s Papayo is a funky, fruit-forward natural coffee shaped by a 150-hour fermentation. This lot was created with the intention of expanding Nicolle’s presence and portfolio in the U.S. market.
It’s a coffee for special occasions—one that sparks discussions and long conversations in the lab. When we first cupped it with the team, its wild intensity surprised some and its refreshing innovation captivated others. It delivers a deep sweetness with notes of mango, blackberry, and warm brown spices, all wrapped in a heavy, creamy mouthfeel.

About the producer
Nicolle comes from a coffee-growing family, with a farm established in 1984. Today, the farm has become a true family project, where each member plays an important role—working hard to improve their cultivation practices, processing methods, and the overall quality of their specialty coffee. Despite her young age, Nicolle has shown a strong interest in deepening her knowledge of cupping and sensory profiling.
