This coffee marks the first collaboration between Jhon Didier and his son, Juan Camilo—the beginning of a new generation on the farm. Guided by Christopher Feran, they wanted to create a natural process that would highlight the character of Chiroso rather than overpower it.
They chose a short 48-hour cherry fermentation, followed by a long, slow drying under shade with careful control. This approach preserves the variety's floral and tropical character while adding sweetness and body.
The cup is vibrant and expressive, with notes of pineapple, papaya, strawberry, cherry, jasmine, and milk chocolate. It has a creamy body, bright citrus acidity, and a long finish of ripe fruit and chocolate.
